Spagetti with oil, chillies and black pepper

Taught to me by an Italian surgeon along with some meat recipes I avoided and promptly forgot

Ingredients
Oil - preferably olive - 4 tablespoons
Garlic - 2 cloves - chopped finely
Dried Chillies - 4 - broken by fingers
Black Pepper -pepper mill preferably - about a teaspoon
Spagetti - enough for one

Put the oil in a small pan and heat gently. Add the black pepper, garlic and chillies. The garlic should cook slowly - a low heat is required. Leave for at least 5 minutes before starting tho cook the spaggetti.
Once the spagetti is drained mix the oil and othe ingredients with it. Tuck in. A glass of stout appears to be the best way to avoid excessive effects from the chillies.
Modify over time to get the level of ingredients right for you.

Chole

Some time back I went to the Ideal Home exhibition in London and picked up a book, The Flavours of Gujarat, published by Virani Food Products. There is always one recipe I make constantly out each of the books I have and from this book it is this chickpea dish.

Ingredients
8oz chickpeas - washed and soaked overnight
1 and half pints of water
Pinch of bicarbonate of soda
1 and quarter tsp salt
3 tbs oil
2 medium potatoes cut into large chunks
1 medium onion chopped
2 tbs dhana jeera powder
half tsp turmeric powder
1 tsp chilli powder
1 inch piece of ginger finely chopped
2 tsp sugar
14 oz. tin of tomatoes roughly chopped
1 tsp garam masala
2 tbs lemon juice

Simmer the chickpeas in the water, salt and bicarbonate of soda for 50 mins. then drain
Heat the oil in a fry pan (I use a Wok) and fry the potatoes until tender. (You are not making chips!) Remove the potatoes and set aside.
In the same pan fry the onions for 3 to 4 minutes
Add the dhana jeera, chilli, turmeric powder, crushed ginger and sugar. Stir for a few seconds. Mix well
Add the tomatoes and cook for 2 mins
Add potatoes and chickpeas. Cook for 5 mins with occasional stirring
Add garam masala and lemon juice and stir in

I tend to make this dish the day before and dont use a garnish when serving but the recipe book does mention using 2 sliced tomatoes, 2 tbs of chopped fresh coriander and some sliced green chillies to top things off.
