A couple of answers here.
A lot of Nepalese people do - well, most days anyway. Out in the hills, fresh meat and veg can be a bit hard to come by, so
dahl-baht
(dahl and rice) is their standard everyday meal. A few greens to add variety and a stringy old chicken or bit of goat from time to time.
The choice is yours, check the menu as there may well be
