Phulka Method


Use the basic Roti Dough Recipe and a tawa or griddle with an open flame next to it (or a pre-heated grill with a solid baking sheet).

  1. Follow the method for chapattis until the chapatti is on the tawa/griddle
  2. After approx 30 seconds flip over
  3. When brown spots appear flip over and immediately lift with tongs to hold over open flame, moving the phulka around to cook evenly. (Alternatively lift gently with spatula and place under the hot grill until light brown patches appear)
  4. Wrap in foil while cooking the rest
